Lentil Tacos with Avocado Crema

Ingredients
  

For the Lentil Filling:

1 cup brown or green lentils, rinsed and drained

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt (or to taste)

½ teaspoon black pepper

2 cups vegetable broth or water

1 lime, juiced

Fresh cilantro, chopped (for garnish)

For the Avocado Crema:

1 ripe avocado

¼ cup Greek yogurt (or a dairy-free substitute)

2 tablespoons lime juice

1 garlic clove

Salt and pepper to taste

Water (to thin if needed)

For Assembly:

8 small corn or flour tortillas

Sliced radishes (optional)

Shredded lettuce (optional)

Sliced jalapeños (optional)

Instructions
 

Prepare the Lentil Filling:

    - In a medium saucepan, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

      - Add minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until fragrant.

        - Stir in the cumin, smoked paprika, chili powder, salt, and black pepper. Cook for another minute to toast the spices.

          - Add the rinsed lentils and vegetable broth (or water) to the pan. Bring to a boil, then reduce the heat to low, cover, and let simmer for 25-30 minutes, or until lentils are tender and most of the liquid is absorbed. If needed, add more broth/water during cooking.

            - Once done, remove from heat and stir in lime juice. Adjust seasoning if necessary.

              Make the Avocado Crema:

                - In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, garlic clove, and a pinch of salt and pepper. Blend until smooth and creamy. If the mixture is too thick, add a few tablespoons of water to reach your desired consistency.

                  Assemble the Tacos:

                    - Warm the tortillas on a skillet or in the microwave until pliable.

                      - Spoon a generous amount of the lentil filling onto each tortilla.

                        - Drizzle with avocado crema and top with sliced radishes, shredded lettuce, and sliced jalapeños as desired.

                          - Garnish with fresh cilantro.

                            Serve and Enjoy:

                              - Serve the tacos immediately for a delightful meal, with extra avocado crema on the side!
