2 cups whole wheat penne pasta

1 lb boneless skinless chicken breasts

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup balsamic vinaigrette

2 tablespoons lemon juice

Optional: 1 teaspoon dried oregano for a flavor boost

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with olive oil, Italian seasoning, salt, and pepper. Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side until fully cooked and golden brown (internal temperature should reach 165°F). Let the chicken rest for a few minutes, then slice it into bite-sized pieces.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta, sliced chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley. Toss to combine.

        Dress the Salad: In a small bowl, whisk together the balsamic vinaigrette and lemon juice. Pour the dressing over the pasta salad and toss until everything is evenly coated. Adjust seasoning with salt, pepper, and dried oregano if desired.

          Chill and Serve: refrigerate the salad for at least 30 minutes to allow flavors to meld. Serve cold or at room temperature.
