4 large russet potatoes

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked bacon, crumbled

1/2 cup sour cream

1/2 cup green onions, chopped

1/2 cup diced tomatoes

1/4 cup pickled jalapeños (optional)

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and pat them dry. Prick each potato several times with a fork, then rub them lightly with olive oil. Season with salt and pepper.

      Bake the Potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

        Cool and Slice: Remove the potatoes from the oven and let them cool slightly. Once cool enough to handle, slice each potato in half lengthwise and scoop out a small portion of the flesh, creating a boat.

          Prepare the Toppings: In a large bowl, combine the scooped potato flesh, cheddar cheese, mozzarella cheese, crumbled bacon, garlic powder, and onion powder. Mix until well combined.

            Assemble the Nachos: Preheat the broiler on your oven. Place the potato halves on a baking sheet, skin side down. Generously fill each potato half with the cheese and bacon mixture.

              Broil the Nachos: Place the baking sheet under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
