Loaded Chicken Sweet Potato Cups

2 large sweet potatoes

1 pound cooked chicken breast, shredded or diced

1 cup black beans, rinsed and drained

1 cup corn, fresh or frozen

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional toppings: diced avocado, sliced jalapeños, hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and dry the sweet potatoes. Pierce them several times with a fork and place them on a baking sheet. Roast in the preheated oven for about 40-50 minutes, or until tender when pierced with a knife.

      Make Chicken Filling: While the sweet potatoes are baking, in a large bowl, combine the shredded chicken, black beans, corn, chili powder, cumin, garlic powder, salt, and pepper. Mix well until all ingredients are evenly combined.

        Assemble Cups: Once the sweet potatoes are cool enough to handle, slice them in half lengthwise and scoop out a small amount of the flesh (set aside for another use or mash and incorporate into the chicken filling). Be careful not to scoop too deep; leave enough flesh for structure.

          Fill Sweet Potatoes: Fill each sweet potato half with the chicken mixture, pressing down slightly to ensure it’s packed in. Top each filled cup with shredded cheddar cheese.

            Bake Again: Place the loaded sweet potato cups back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
