Loaded Nacho Sweet Potato Fries

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

1 cup cooked black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese (can substitute with vegan cheese)

¼ cup sliced jalapeños (pickled or fresh)

½ cup diced tomatoes

½ cup diced red onion

½ cup sour cream or Greek yogurt (optional)

¼ cup fresh cilantro, chopped

Lime wedges for serving

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the sweet potatoes. Cut them into fries, about 1/4 inch thick.

    Season the Fries: In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, chili powder, salt, and pepper until well coated.

      Bake: Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.

        Gather the Toppings: While the fries are baking, prepare the toppings. In a bowl, mix the black beans, corn, diced tomatoes, and diced red onion. Season with a pinch of salt and pepper.
