Ingredients

1 lb ground turkey (or pork for a richer flavor)

4 cups coleslaw mix (shredded cabbage and carrots)

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

Salt and pepper to taste

Sesame seeds and additional green onions for garnish

Instructions

Prepare the Base: In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and ginger, sautéing for about 1 minute until fragrant.

Cook the Meat: Add the ground turkey to the skillet. Break it up with a spatula and cook until browned and fully cooked through, about 6-8 minutes. Season with salt and pepper.

Add the Veggies: Stir in the coleslaw mix and cook for another 3-5 minutes until the cabbage is tender.

Flavor it Up: Pour in the soy sauce, rice vinegar, and sriracha (if using). Mix everything together well and let it cook for an additional 2 minutes for the flavors to meld.

Finishing Touches: Remove from heat and stir in the chopped green onions. Taste and adjust seasoning if needed.

Serve: Spoon the egg roll mixture into bowls and top with sesame seeds and additional green onions for garnish.
