2 ripe mangoes, peeled and diced

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust to sweetness preference)

1 tablespoon fresh lime juice

1/2 teaspoon pure vanilla extract

A pinch of sea salt

Optional: Small coconut flakes for garnish

Instructions
 

Prepare the Mangoes: In a blender, combine the diced mangoes and blend until smooth. If you prefer some texture, you can blend only until mostly smooth and leave a few chunks.

    Blend Coconut Mixture: In a separate bowl, whisk together the coconut milk, honey (or maple syrup), lime juice, vanilla extract, and sea salt until fully combined. Taste and adjust the sweetness or lime juice as desired.

      Layer the Popsicles: In your popsicle molds, pour about half of the mango puree into each mold, filling them about 1/3 full.

        Add Coconut Layer: Next, pour the coconut mixture on top of the mango puree until the molds are filled just below the top.

          Finish with Mango: Spoon the remaining mango puree on top, layering it with a slight swirl if you wish to create a beautiful marbled effect.

            Insert Sticks: If using traditional molds, insert the popsicle sticks. If your molds have a cover, place the tops on.

              Freeze: Freeze the popsicles for at least 6-8 hours, or until completely solid. To easily remove the popsicles, run warm water over the outside of the mold for a few seconds.

                Garnish (Optional): If using, sprinkle some small coconut flakes on top of the popsicles before serving for added texture and visual appeal.

                  Serve: Enjoy these refreshing treats straight from the mold or share them with friends on a hot day!
