Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup cream cheese, softened

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 tbsp fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes until golden, stirring constantly to avoid any lumps.

Add Milk: Gradually whisk in the whole milk, continuing to stir until the mixture thickens (about 5-7 minutes). Keep stirring to prevent the sauce from sticking to the bottom of the pan.

Incorporate Cream Cheese: Add the softened cream cheese into the milk mixture and whisk until completely smooth and creamy.

Add Spices and Cheese: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Gradually mix in the shredded cheddar and Gruyère cheeses until fully melted and the sauce is smooth.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir to ensure all the pasta is well coated in that delicious cheesy mixture.

Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13-inch baking dish.

Create Breadcrumb Topping: In a small bowl, combine the panko breadcrumbs with a drizzle of melted butter (about a tablespoon) and stir until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture over the top of the macaroni and cheese.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

Garnish and Serve: Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh parsley for a pop of color and freshness.
