2 cups cooked chicken breast, shredded or cubed

1 ripe mango, diced

1 large avocado, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper, to taste

Mixed greens (for serving)

Instructions
 

Prepare the Chicken: If you haven’t done so already, cook the chicken breast by poaching or grilling until fully cooked. Allow it to cool, then shred or dice it into bite-size pieces.

    Dice the Fruits & Vegetables: While the chicken cools, dice the mango and avocado, chop the red bell pepper, and halve the cherry tomatoes. Finely chop the red onion and cilantro.

      Make the Dressing: In a small bowl, whisk together lime juice, olive oil, honey (if using), salt, and pepper until smooth.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, mango, avocado, red bell pepper, cherry tomatoes, red onion, and cilantro.

          Add the Dressing: Drizzle the dressing over the salad mixture and gently toss everything together, being careful not to mash the avocado.

            Serve: Place a bed of mixed greens on individual plates or a large serving platter. Spoon the chicken salad on top of the greens. Optionally, garnish with additional cilantro or lime wedges.

              Chill (Optional): For enhanced flavors, let the salad chill in the refrigerator for about 15-30 minutes before serving.
