Ingredients

1 ripe mango (peeled and diced)

1/2 cup chia seeds

2 cups coconut milk (or almond milk)

2 tablespoons maple syrup (or honey, optional)

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Toasted coconut flakes for topping (optional)

Instructions

Prepare the Coconut Base: In a medium-sized mixing bowl, whisk together the coconut milk, maple syrup (or honey), vanilla extract, and a pinch of salt until well combined.

Add Chia Seeds: Stir in the chia seeds, making sure they are evenly distributed throughout the coconut milk mixture.

Chill: Cover the bowl and refrigerate for at least 4 hours or overnight. This allows the chia seeds to swell and create a creamy, pudding-like consistency.

Blend the Mango: While the chia pudding is chilling, blend the diced mango in a blender or food processor until smooth, creating a mango puree. You can reserve some diced mango for garnish if desired.

Layer the Pudding: Once the chia pudding has set, take it out of the fridge and give it a good stir. In serving glasses, layer the chia pudding and mango puree alternately. Start with a layer of chia pudding, followed by a layer of mango puree, and repeat until the glasses are filled.

Garnish and Serve: Top each serving with reserved diced mango, fresh mint leaves, and a sprinkle of toasted coconut flakes for added texture and flavor. Serve chilled and enjoy your tropical treat!
