1 lb (450g) boneless, skinless chicken thighs

2 ripe mangoes, diced

1 cup cooked jasmine rice

1 red bell pepper, thinly sliced

1 avocado, sliced

1 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 lime, juiced

1 teaspoon garlic powder

Salt and pepper to taste

Optional: sliced radishes and jalapeños for garnish

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine the olive oil, soy sauce, honey, lime juice, garlic powder, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate in the fridge for at least 30 minutes, or up to 2 hours for the best flavor.

      Cook the Chicken:

        Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade (discard any leftover marinade) and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Remove from heat and let it rest for a couple of minutes before slicing.

          Prepare the Rice:

            While the chicken is cooking, prepare your jasmine rice according to package instructions. Once cooked, set aside.

              Assemble the Bowls:

                In serving bowls, layer the jasmine rice as the base. Top the rice with the sliced chicken, diced mangoes, black beans, corn, red bell pepper, and avocado slices.

                  Garnish and Serve:

                    Sprinkle fresh cilantro over the top. For an extra kick, add sliced radishes and jalapeños if desired. Drizzle with more lime juice for added freshness.
