2 medium apples (such as Granny Smith or Honeycrisp), cored and sliced

1/4 cup pure maple syrup

2 tbsp olive oil

1/2 tsp sea salt

1/4 tsp black pepper

1/2 tsp cinnamon

1/4 cup chopped pecans (optional)

Fresh thyme for garnish (optional)

Preheat the oven: Begin by preheating your oven to 400°F (200°C). This will ensure that the Brussels sprouts roast perfectly while caramelizing the apples.

    Prepare the Brussels sprouts: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, sea salt, black pepper, and cinnamon until evenly coated.

      Combine with apples: Add the sliced apples to the bowl with Brussels sprouts. Drizzle the maple syrup over the mixture and gently toss everything together, ensuring the apples and Brussels sprouts are nicely coated.
