2 medium-sized delicata squashes

3 tablespoons olive oil

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup chopped pecans (optional)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy clean-up.

    Prepare the Squash: Cut each delicata squash in half lengthwise and scoop out the seeds with a spoon. Slice the squash into 1/2-inch thick half-moons for even roasting.

      Make the Maple Mixture: In a small bowl, whisk together the olive oil, maple syrup, ground cinnamon, nutmeg, salt, and pepper until well combined.

        Toss and Coat: In a large mixing bowl, combine the sliced delicata squash with the maple mixture. Toss until all the pieces are evenly coated.

          Arrange on Baking Sheet: Spread the squash slices evenly on the prepared baking sheet in a single layer. Make sure they aren’t overcrowded to ensure they roast properly.

            Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, flipping halfway through. The squash should be tender and caramelized around the edges.

              Add Nuts (Optional): If using, add the chopped pecans during the last 5 minutes of roasting to give them a nice toast and crunch.

                Garnish and Serve: Once done, remove the squash from the oven. Transfer to a serving dish and sprinkle with fresh thyme leaves, if desired. Serve warm and enjoy the delightful flavors!
