4 boneless, skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (adjust to taste)

1 cup parmesan cheese, grated

Fresh basil for garnish

Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, lower the heat to medium, and add the minced garlic. Sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and cook for another 1-2 minutes.

        Creamy Mixture: Pour in the heavy cream, stirring continuously. Add in Italian seasoning, red pepper flakes, and parmesan cheese. Stir until the cheese is melted and the sauce has thickened slightly, about 3-4 minutes.

          Combine: Return the seared chicken breasts back into the skillet, spooning the sauce over them. Allow to simmer for an additional 5-7 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).

            Garnish and Serve: Serve the chicken warm, garnished with fresh basil for a pop of flavor and color. Enjoy with pasta, rice, or your choice of side.
