Ingredients

For the Meatballs:

1 lb ground beef (80% lean)

1/2 lb ground pork

1 cup breadcrumbs (preferably Italian style)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 large egg, lightly beaten

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

1/4 cup milk

For the Potatoes:

1.5 lbs baby potatoes, halved or quartered

3 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

1 tsp dried rosemary (or 1 tbsp fresh)

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Prepare the Meatball Mixture:

    - In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, pepper, red pepper flakes, and milk. Mix until just combined; be careful not to overmix.

      Shape the Meatballs:

        - Preheat your oven to 400°F (200°C). Scoop about 2 tablespoons of the meat mixture and roll it into a ball; repeat until all the mixture is used. Set aside.

          Make the Potatoes:

            - In a mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, rosemary, salt, and pepper until they are well coated.

              Bake the Potatoes:

                - Spread the seasoned potatoes in a single layer on a large baking sheet. Bake in the preheated oven for about 20 minutes.

                  Add the Meatballs:

                    - After 20 minutes, remove the baking sheet from the oven and gently place the meatballs among the potatoes. Return the sheet to the oven.

                      Bake Everything Together:

                        - Bake for an additional 20-25 minutes, or until the meatballs are cooked through (internal temperature should reach 160°F or 70°C) and the potatoes are golden and tender.

                          Garnish and Serve:

                            - Once cooked, remove from the oven and sprinkle fresh parsley over the top for a burst of color. Serve the meatballs and roasted potatoes together, drizzled with any remaining pan juices if desired.
