Mediterranean Lamb Burgers with Tzatziki

For the Lamb Burgers:

1 lb ground lamb

2 cloves garlic, minced

1/4 cup red onion, finely chopped

2 tbsp fresh parsley, chopped

2 tbsp fresh mint, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

4 pita bread or burger buns

Sliced tomatoes and red onion, for serving

For the Tzatziki:

1 cup plain Greek yogurt

1/2 cucumber, grated and excess moisture squeezed out

1 clove garlic, minced

1 tbsp fresh dill, chopped (or mint for a twist)

1 tbsp lemon juice

Salt and pepper, to taste

Instructions
 

Prepare the Tzatziki:

    - In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice.

      - Mix well and season with salt and pepper to taste. Refrigerate for at least 30 minutes to allow flavors to meld.

        Make the Lamb Burger Mixture:

          - In a large mixing bowl, combine the ground lamb, minced garlic, chopped red onion, parsley, mint, cumin, coriander, salt, and pepper.

            - Use your hands to mix the ingredients until just combined. Be careful not to overwork the meat as it can become tough.

              Form the Patties:

                - Divide the lamb mixture into four equal portions and shape each portion into a patty about 3/4 inch thick.

                  Cook the Patties:

                    - Heat olive oil in a large skillet or grill pan over medium-high heat. Once hot, add the lamb patties, cooking for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

                      - If using a grill, preheat it and cook for the same time as on the skillet.

                        Assemble the Burgers:

                          - Lightly toast the pita bread or burger buns on the grill or in a toaster.

                            - Place each lamb patty on a pita/bun and top with sliced tomatoes and red onion. Generously drizzle or dollop the tzatziki sauce over the top.

                              Serve:

                                - Serve the Mediterranean Lamb Burgers warm, garnished with extra herbs or alongside a fresh salad for a complete meal.
