Mediterranean Lemon Garlic Chicken Thighs

4 large bone-in, skin-on chicken thighs

4 cloves garlic, minced

1 large lemon, zested and juiced

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, pepper, and red pepper flakes. Whisk the mixture until well blended.

    Add Chicken Thighs: Place the chicken thighs into the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour (preferably overnight for more flavor).

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Prepare Baking Dish: In a large oven-safe skillet or baking dish, add a bit of olive oil to the bottom to prevent sticking.

          Sear Chicken Thighs: Remove the chicken thighs from the marinade (reserve the marinade) and pat them dry with paper towels. Heat a skillet over medium-high heat. Place the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and sear the other side for another 3-4 minutes.

            Bake in the Oven: Pour the reserved marinade over the seared chicken thighs. Transfer the skillet or baking dish to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

              Garnish and Serve: Once done, remove the baking dish from the oven and let it rest for a few minutes. Sprinkle the chopped fresh parsley over the chicken and serve with lemon slices on the side.
