1 cup green or brown lentils, rinsed and drained

4 cups water or vegetable broth

1 medium red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 cucumber, diced

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled (optional for a vegan version)

¼ cup fresh parsley, chopped

2 tablespoons fresh mint, chopped

¼ cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Cook the Lentils: In a medium saucepan, combine lentils and water (or vegetable broth). Bring to a boil, then reduce heat to a simmer and cook for about 20-25 minutes, or until lentils are tender but not mushy. Drain and allow to cool.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled lentils, chopped vegetables, olives, herbs, and feta cheese. Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.
