4 cups fresh corn kernels (or 2 cans of sweet corn, drained)

1 cup sour cream

1 cup mayonnaise

1 cup crumbled cotija cheese (plus extra for garnish)

1/2 cup chopped fresh cilantro

1/4 cup lime juice (about 2 limes)

1 teaspoon chili powder (adjust for spice preference)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt & pepper to taste

Tortilla chips (for serving)

Instructions
 

Prepare the Corn: If using fresh corn, grill or sauté the corn kernels in a pan over medium-high heat until they are slightly charred (about 6-8 minutes). If using canned corn, you can skip this step and simply drain it.

    Mix the Base: In a large mixing bowl, combine the sour cream and mayonnaise. Stir until well blended.

      Add the Flavor: To the sour cream-mayo mix, add the crumbled cotija cheese, chopped cilantro, lime juice, chili powder, garlic powder, onion powder, and salt and pepper to taste. Mix thoroughly to combine all ingredients.

        Incorporate the Corn: Fold in the corn (whether grilled or canned) gently into the mixture until evenly distributed.

          Taste and Adjust: Take a moment to taste the dip. Adjust the seasoning and lime juice as desired to suit your flavor preference.

            Chill: For the best flavor, cover the dip with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

              Serve: When ready to serve, take the dip out of the refrigerator and give it a good stir. Top with additional crumbled cotija cheese and more chopped cilantro for garnish. Serve alongside crispy tortilla chips.
