1/4 cup milk (dairy or non-dairy)

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

1 medium apple, peeled and finely chopped

Optional: 1/4 cup walnuts or pecans, chopped

Preheat the oven: Set your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease it with cooking spray.

    Mix the dry ingredients: In a large bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, ground cinnamon, and salt. Mix well to ensure even distribution.

      Combine the wet ingredients: In another bowl, whisk together the applesauce, milk, vegetable oil, egg, and vanilla extract until smooth and well combined.
