Mini BBQ Jackfruit Nacho Cups

2 cups young green jackfruit in brine, drained and rinsed

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

12 mini tortilla cups (store-bought or homemade)

1 cup shredded cheddar cheese (or dairy-free cheese)

1 ripe avocado, diced

½ cup diced tomatoes

¼ cup sliced jalapeños (optional for extra heat)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Jackfruit: In a medium saucepan over medium heat, add the olive oil. Once hot, add the rinsed jackfruit, smoked paprika, garlic powder, onion powder, salt, and pepper. Sauté for about 5-7 minutes until the jackfruit is slightly golden.

    Shred the Jackfruit: Remove the saucepan from the heat. Using a fork or your hands, shred the cooked jackfruit into smaller pieces, mimicking pulled pork texture.

      Add BBQ Sauce: Return the shredding jackfruit to the saucepan, and stir in the BBQ sauce. Cook over low heat for an additional 5-10 minutes, allowing the jackfruit to soak in the flavors.

        Prepare the Tortilla Cups: Preheat your oven to 375°F (190°C). Place the mini tortilla cups on a baking sheet. If making homemade cups, cut circles from tortillas and press them into a muffin tin, then bake for about 10 minutes or until they are crispy.

          Assemble the Nacho Cups: Once the tortilla cups are ready, fill each cup with a generous portion of the BBQ jackfruit mixture. Top each cup with a sprinkle of shredded cheese.

            Bake Again: Return the assembled nacho cups to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Garnish & Serve: Remove from the oven and let cool slightly. Top each nacho cup with diced avocado, tomatoes, and jalapeños, if using. Garnish with fresh cilantro. Serve with lime wedges on the side for an extra zesty touch.
