Mini BBQ Tofu Lettuce Boats

1 block (14 oz) firm tofu, drained and pressed

1 tablespoon olive oil

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon soy sauce

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 head of butter or iceberg lettuce (for the boats)

1/2 cup diced cucumber

1/4 cup grated carrots

1/4 cup sliced green onions

Fresh cilantro leaves for garnish (optional)

Sesame seeds for garnish (optional)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small cubes, around 1-inch pieces. This will help each piece crisp up nicely and absorb the flavors.

    Marinate the Tofu: In a large bowl, whisk together the BBQ sauce, soy sauce, garlic powder, and smoked paprika. Add the cubed tofu to the marinade, tossing gently to ensure all pieces are well-coated. Let it marinate for at least 15 minutes to an hour for maximum flavor.

      Cook the Tofu: Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated tofu, reserving a few tablespoons of the marinade. Cook for about 5–7 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides.

        Add Extra Flavor: Pour in the reserved marinade and cook for an additional 2 minutes, allowing the sauce to thicken slightly and coat the tofu.

          Prepare the Lettuce Boats: While the tofu is cooking, carefully separate the leaves of the lettuce, keeping them whole (these will serve as your boats). Lay them on a platter.

            Assemble the Boats: Spoon a generous amount of the BBQ tofu into each lettuce leaf. Top with diced cucumber, grated carrots, and sliced green onions.
