8 small corn tortillas

1 cup cooked and crumbled breakfast sausage (or plant-based alternative)

4 large eggs

1/2 cup milk (or non-dairy milk)

1 cup shredded cheddar cheese (or dairy-free cheese)

1/2 cup diced bell peppers (mixed colors)

1/4 cup green onions, sliced

1/2 teaspoon chili powder

Salt and pepper to taste

Cooking spray (or olive oil for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 24-cup mini muffin tin with cooking spray or olive oil.

    Prepare Corn Tortillas: In a small skillet, warm the corn tortillas over low heat for about 10-15 seconds per side until soft and pliable. Then, cut each tortilla into quarters.

      Assemble the Base: Place each quarter of a tortilla into the greased muffin tin cups, pressing down lightly to form a small cup shape.

        Cook the Filling: In a medium bowl, whisk together the eggs, milk, chili powder, salt, and pepper. Stir in the cooked breakfast sausage, diced bell peppers, and half of the green onions.

          Fill the Tortilla Cups: Carefully pour the egg mixture into each tortilla cup, filling them about 3/4 full. Sprinkle shredded cheddar cheese over the top of each filled cup.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is fully set and the cheese is melted and bubbly.

              Cool and Serve: Once done, remove the mini breakfast taco casserole bites from the oven and let them cool for a few minutes. Carefully lift them out of the muffin tin.
