4 small whole wheat pita breads

4 large eggs

1/2 cup diced bell peppers (mix of red and green)

1/4 cup diced red onion

1/2 cup cooked chorizo or turkey sausage (optional)

1/2 cup shredded sharp cheddar cheese

1/4 cup fresh cilantro, chopped

1 small avocado, sliced

1/2 cup salsa (mild or spicy as per preference)

Salt and pepper to taste

Olive oil for cooking

Instructions
 

Prepare the Pita Circles:

    - Preheat your oven to 350°F (175°C).

      - Using a round cookie cutter, cut each pita bread into smaller circles (about 3 inches in diameter). You can get about 2-3 circles per pita. Set these aside on a baking sheet.

        Cook the Vegetables:

          - Heat a skillet over medium heat and add a drizzle of olive oil.

            - Add the diced bell peppers and red onion. Sauté for about 3-4 minutes until softened.

              Scramble the Eggs:

                - In a bowl, whisk the eggs with a pinch of salt and pepper.

                  - Pour the eggs into the skillet with the vegetables. If using, add the chopped chorizo or turkey sausage. Cook, stirring gently until the eggs are just set, around 4-5 minutes. Remove from heat.

                    Assemble the Taco Pita Circles:

                      - Spread a thin layer of salsa on each pita circle.

                          Bake:
