Mini Chicken Cordon Bleu Sliders

Ingredients
  

1 lb boneless, skinless chicken breasts

6 slices of ham (preferably Black Forest or Virginia)

6 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon Dijon mustard

12 mini slider buns

Pickles, for garnish (optional)

Fresh parsley, for garnish (optional)

Instructions
 

Prep the Chicken: Preheat your oven to 400°F (200°C). Butterfly the chicken breasts by slicing them horizontally, being careful not to cut all the way through. You should be able to open them like a book. Place the chicken between two sheets of plastic wrap and pound them to about 1/2 inch thick using a meat mallet or rolling pin.

    Assemble the Filling: Spread a thin layer of Dijon mustard on the inside of each chicken breast. Lay down a slice of ham and a slice of Swiss cheese on one half of the chicken. Fold the other half over to create a 'sandwich.' Secure the edges with toothpicks if necessary.

      Prepare the Breading Station: Set up three shallow bowls - one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, garlic powder, paprika, salt, and pepper.

        Bread the Chicken: Dip each chicken piece first into the flour, shaking off the excess, then into the egg, and finally into the breadcrumb mixture, pressing down lightly to ensure the breadcrumbs stick.

          Bake: Arrange the breaded chicken on a baking sheet lined with parchment paper. Spray lightly with cooking spray for extra crispiness. Bake in the preheated oven for about 20-25 minutes until the chicken is cooked through and the coating is golden brown.

            Prepare the Sliders: While the chicken is baking, slice the mini slider buns in half. If desired, lightly toast them in a dry skillet to add a bit of crunch.

              Assemble the Sliders: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Slice each chicken piece into quarters if desired. Place a piece of chicken on the bottom half of each bun, add a pickle if using, and then top with the other half of the bun.

                Serve: Arrange the sliders on a platter and garnish with fresh parsley. Serve warm with your choice of dipping sauce like honey mustard or ranch dressing.
