1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 can (15 oz) enchilada sauce

1 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/2 cup corn (fresh, frozen or canned)

12 slider buns (mini soft rolls)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes. Add garlic and cook for another minute until fragrant.

    Brown the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until it’s browned and fully cooked, about 5-6 minutes.

      Add Spices: Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Mix well to combine and cook for another 1-2 minutes.

        Incorporate Sauce: Pour in the enchilada sauce and stir until the chicken is well coated. Add in the black beans and corn, stir until evenly combined, then simmer for an additional 5-7 minutes until heated through.

          Prepare Slider Buns: Preheat your oven to 350°F (175°C). Slice the slider buns in half horizontally and place them on a baking sheet.

            Assemble the Sliders: Spoon a generous amount of the chicken enchilada mixture onto the bottom half of each slider bun. Top with shredded cheddar cheese. Place the top halves of the buns over the filling.

              Bake the Sliders: Cover the baking sheet with aluminum foil and bake in the preheated oven for about 10-12 minutes. Remove the foil and bake for an additional 5 minutes, until the cheese is melted and buns are slightly toasted.

                Serve: Remove from the oven and garnish with fresh chopped cilantro. Serve warm with a side of sour cream for dipping.
