1 medium onion, sliced

2 tablespoons olive oil

1 tablespoon taco seasoning

12 mini taco cones (store-bought or homemade)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream

1/2 cup guacamole

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: If you're using store-bought mini taco cones, preheat your oven to 350°F (175°C) to warm them up.

    Cook the Chicken & Veggies:

      - In a large skillet, heat the olive oil over medium heat.

        - Add the diced chicken to the skillet and season with taco seasoning, salt, and pepper. Cook for about 5-7 minutes, until the chicken is cooked through and golden brown.

          - Incorporate the sliced bell pepper and onion into the skillet. Sauté for an additional 4-5 minutes until the vegetables are tender and slightly caramelized. Remove from heat.

            Prepare the Taco Cones:

              - If using store-bought taco cones, arrange them on a baking sheet and place them in the oven for about 5-7 minutes to warm them up.

                - If you’re making homemade cones, take small flour tortillas, place them into a muffin tin, and bake at 350°F (175°C) for about 10-12 minutes or until crispy and shaped like cones.

                  Assemble the Taco Cones:

                    - Spoon the chicken and veggie mixture into each mini taco cone.

                      - Top with a generous amount of shredded cheese.

                        Melt the Cheese:

                          - Place the filled taco cones back in the oven for another 3-4 minutes or until the cheese is melted and bubbly.
