2 cups fresh broccoli florets, chopped

1 cup shredded sharp cheddar cheese

4 large eggs

1 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 cup diced onion (optional)

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or olive oil.

    Prepare the Broccoli: In a medium pot of boiling water, blanch the chopped broccoli florets for about 2 minutes. Drain and immerse them in ice water to stop cooking. Once cooled, drain again and set aside.

      Whisk the Eggs: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined and frothy.

        Combine Ingredients: Fold in the blanched broccoli, shredded cheddar cheese, and diced onion (if using) into the egg mixture until evenly mixed.

          Fill the Muffin Tin: Carefully pour the mixture into the prepared mini muffin tin, filling each cup about 2/3 full to allow for rising.

            Bake: Place the tin in the preheated oven and bake for about 15-18 minutes, or until the quiches are puffed and golden on top, and a toothpick inserted comes out clean.

              Cool and Serve: Once baked, remove from the oven and let cool in the tin for 5 minutes. Gently run a knife around the edges to loosen them, then transfer to a cooling rack. Serve warm or at room temperature.
