2 cups cooked chicken breast, shredded

1 cup cherry tomatoes, halved

½ cucumber, diced

½ red onion, finely chopped

¼ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup Greek yogurt

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

4 small flatbreads or pita breads

Fresh parsley or mint for garnish

Instructions
 

In a large mixing bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

    In a separate small bowl, whisk together the Greek yogurt, olive oil, red wine vinegar, dried oregano, salt, and pepper until smooth to create the dressing.

      Pour the dressing over the chicken and vegetable mixture. Toss everything gently until well coated with the dressing.

        Warm the flatbreads in a skillet over low heat for about 1-2 minutes on each side until soft and pliable.

          To assemble, take a flatbread and spoon a generous portion of the chicken salad mixture onto the center of the bread.

            Fold the sides over the filling or roll it up, depending on your preference.
