Mini Pepper Chicken Nacho Bites

12 mini sweet bell peppers

1 cup cooked chicken, shredded

1 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/4 cup salsa

1 tablespoon taco seasoning

1/4 cup sour cream (for serving)

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Olive oil spray (for roasting)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Peppers: Cut each mini sweet bell pepper in half lengthwise and remove the seeds. Place the pepper halves on a baking sheet, cut side up.

      Season the Chicken: In a bowl, combine the shredded chicken, black beans, salsa, taco seasoning, and half of the cheddar cheese. Mix until well combined.

        Fill the Peppers: Use a spoon to fill each pepper half with the chicken mixture, packing it slightly.

          Top with Cheese: Sprinkle the remaining cheddar cheese generously over the filled peppers.
