4 mini sweet bell peppers (red, yellow, or orange)

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup cooked and crumbled breakfast sausage or bacon (optional)

2 tablespoons milk

Salt and pepper, to taste

1 tablespoon fresh chives, finely chopped (plus extra for garnish)

1/2 teaspoon smoked paprika

Olive oil, for drizzling

1/4 teaspoon garlic powder (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the peppers: Slice the mini bell peppers in half lengthwise and remove seeds. Place them cut side up on a baking sheet lined with parchment paper. Drizzle with a little olive oil and sprinkle with salt and pepper.

      Roast the peppers: Bake in the preheated oven for about 10-15 minutes until they start to soften and are slightly charred. While they roast, prepare the egg mixture.

        Whisk the eggs: In a mixing bowl, combine the eggs, milk, smoked paprika, garlic powder (if using), and a pinch of salt and pepper. Whisk until well combined.

          Add the fillings: Stir in the shredded cheddar cheese, chives, and cooked sausage or bacon (if using) into the egg mixture.

            Fill the peppers: Once the peppers are ready from the oven, remove them carefully. Spoon the egg mixture into each pepper half, filling them generously.

              Bake the breakfast boats: Return the filled peppers to the oven and bake for an additional 15-20 minutes, or until the egg is fully cooked and slightly puffed up.

                Garnish and serve: Remove from the oven and let them cool for a couple of minutes. Garnish with extra chives before serving.
