1 lb (450g) mini smoked sausages

1 red bell pepper, diced

1 yellow bell pepper, diced

1 green bell pepper, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp Italian seasoning

½ tsp paprika

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Prep the Vegetables: Start by washing and dicing the bell peppers and chopping the onion and garlic. Set aside.

    Sauté the Sausages: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mini smoked sausages and cook for about 5-7 minutes until they are browned on all sides. Remove from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Once hot, add the diced onion and sauté for 2 minutes until slightly translucent. Add the minced garlic, and cook for another minute until fragrant.
