Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 cup cooked breakfast sausage, crumbled (about 4-5 sausages)

1/2 cup shredded cheddar cheese

1/4 cup finely chopped green onions (optional)

Maple syrup, for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or line it with mini muffin liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter might be slightly lumpy, which is okay. Do not overmix.

Add Sausage and Cheese: Fold in the crumbled sausage, shredded cheddar cheese, and chopped green onions (if using) until evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup about 3/4 full to allow for rising.

Bake: Bake in the preheated oven for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Serve warm with a drizzle of maple syrup for a delicious sweet-and-savory treat!
