Mini Sweet Corn & Zucchini Fritters

1 cup sweet corn kernels (fresh or frozen)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese (optional for extra flavor)

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons chopped fresh parsley or cilantro

1/4 cup green onions, finely chopped

Prep Zucchini: Start by grating the zucchini. Place it in a clean kitchen towel or cheesecloth and twist to squeeze out as much moisture as possible. This step is essential to prevent soggy fritters.

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, sweet corn kernels, all-purpose flour, cornmeal, eggs, and Parmesan cheese (if using).

      Add Seasonings: Sprinkle in the baking powder, garlic powder, onion powder, salt, and pepper. Also, fold in the chopped parsley and green onions. Stir the mixture until everything is well combined. The batter should be thick but pliable.
