Ingredients
  

1 pound ground beef (or ground turkey)

1 tablespoon taco seasoning

1 cup black beans (drained and rinsed)

1 cup corn (canned or frozen, thawed)

1 cup shredded cheddar cheese

1 cup cherry tomatoes (halved)

1 avocado (diced)

1 cup sour cream

1 package wonton wrappers (about 50 wrappers)

Fresh cilantro (for garnish)

Olive oil spray

Salt and pepper to taste

Instructions
 

Preheat the oven: Set your oven to 375°F (190°C).

    Prepare the meat: In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess grease and stir in taco seasoning with a splash of water. Simmer for 5 minutes and then season with salt and pepper to taste. Remove from heat.

      Prepare the wonton cups: Lightly spray a mini muffin tin with olive oil. Gently press a wonton wrapper into each cup, forming a little cup shape. Spray the tops of the wrappers lightly with more olive oil.

        Layer the fillings: Spoon about a teaspoon of the taco meat into each wonton cup. Next, add a layer of black beans and corn, followed by a sprinkle of shredded cheese.

          Bake: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the edges of the wonton wrappers are golden and crispy, and the cheese is melted.

            Garnish: Remove from the oven and let the cups cool slightly. Top each mini taco cup with halved cherry tomatoes, diced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.

              Serve: Transfer them to a serving platter and enjoy while warm, letting your guests customize with more toppings like salsa or jalapeños if desired.
