Ingredients

4 medium-sized ripe tomatoes

1 can (5 oz) of tuna in water, drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup diced celery

1/4 cup diced red onion

2 tablespoons chopped fresh parsley

Salt and pepper to taste

Lettuce leaves for serving (optional)

Instructions

Prepare the Tomatoes:

    - Carefully cut the tops off the tomatoes and scoop out the insides using a small spoon. Set the empty tomato shells aside and chop the scooped-out flesh into small pieces.

      Make the Tuna Salad:

        - In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, and chopped parsley. Mix well to combine.

          Incorporate Tomato Flesh:

            - Add the chopped tomato flesh into the tuna mixture. Season with salt and pepper to taste. Stir until everything is well blended.

              Stuff the Tomatoes:

                - Spoon the tuna salad mixture generously into each hollowed-out tomato, packing it down gently.

                  Chill and Serve:

                    - For best flavor, place the stuffed tomatoes in the refrigerator for about 30 minutes before serving to let the flavors meld. Arrange on a platter atop lettuce leaves if desired.

                      Enjoy:

                        - Serve chilled as a delightful appetizer or light meal!
