Mini Veggie Pizza Tortilla Cups

Ingredients
  

4 large flour tortillas

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1/2 cup bell peppers, diced (pink, green, or yellow)

1/2 cup red onion, finely chopped

1/2 cup mushrooms, sliced

1/4 cup black olives, sliced

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the tortillas: Using a round cookie cutter or a glass, cut out small circles from each tortilla (about 4 inches in diameter). You should get multiple circles from each tortilla.

      Form the cups: Gently press each tortilla circle into a muffin tin to create little cups. Make sure the edges are not folded down too far.

        Bake the tortilla cups: Place the muffin tin in the preheated oven and bake the tortilla cups for about 6-8 minutes, or until they are lightly golden and crispy. Remove from the oven and let them cool slightly.

          Assemble the pizzas:

            - Spoon about 1 tablespoon of marinara sauce into each tortilla cup.

              - Add a dollop of ricotta cheese on top of the marinara.

                - Sprinkle a good amount of shredded mozzarella cheese over the top.

                  - Add the diced bell peppers, red onion, mushrooms, and olives evenly across all cups.

                    Season: Sprinkle garlic powder, oregano, salt, and pepper over the assembled pizza cups for added flavor.

                      Bake again: Return the muffin tin to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

                        Garnish and serve: Once done, remove from the oven and let cool for a minute. Garnish with fresh basil leaves if desired, and serve warm.
