Ingredients

For the Cake:

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (Granny Smith or Honeycrisp work well)

For the Crumb Topping:

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Prepare the Topping: In a medium bowl, mix 1 cup of flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until crumbly. Set aside.

Mix Dry Ingredients: In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.

Cream Butter and Sugar: In another large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and mix well.

Combine Wet and Dry Mixtures: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

Fold in Apples: Gently fold in the diced apples until evenly distributed throughout the batter.

Assemble the Cake: Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the crumb topping over the batter, ensuring it covers the entire surface.

Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool and Serve: Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature, optionally dusted with powdered sugar.
