For the Pretzel Dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ cups warm water (110°F)

2 tbsp granulated sugar

2 tsp salt

¼ cup unsalted butter, melted

For the Filling:

8 oz mozzarella cheese, cut into small cubes

For the Baking Soda Bath:

½ cup baking soda

9 cups water

For Topping:

1 egg, beaten (for egg wash)

Coarse sea salt (to sprinkle on top)

Activate the Yeast: In a large bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until foamy.

    Make the Dough: Add melted butter and salt to the yeast mixture. Gradually mix in flour, a cup at a time, until a soft dough forms. Knead the dough for about 5-7 minutes until it’s smooth and elastic.

      First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until it doubles in size.

        Prepare Cheese Filling: While the dough is rising, cut mozzarella cheese into small cubes and set aside.

          Shape the Pretzels: Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a long rope (about 18 inches). Take a piece of dough, place a cheese cube in the middle, and wrap the dough around the cheese, sealing it well. Shape it into a pretzel by twisting the ends together and attaching them at the bottom.

            Baking Soda Bath: In a large pot, bring 9 cups of water and the baking soda to a boil. Preheat your oven to 425°F (220°C). Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and let them drain on a paper towel.

              Egg Wash: Place the pretzels on a parchment-lined baking sheet. Brush each pretzel with the beaten egg and sprinkle coarse sea salt on top.

                Bake: Bake in the preheated oven for 12-15 minutes or until they are golden brown. Keep an eye on them to prevent over-baking.
