Mushroom Avocado Toast

4 slices of whole-grain bread

1 ripe avocado

1 cup of mixed mushrooms (such as cremini, shiitake, and oyster), sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Red pepper flakes (optional, for some heat)

Fresh lemon juice (for garnish)

Microgreens (for garnish, optional)

Instructions
 

Prepare the Mushrooms: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the minced garlic and sauté for 1 minute until fragrant.

    Cook the Mushrooms: Add the sliced mixed mushrooms to the skillet. Stir in the soy sauce and thyme, and cook for about 5-7 minutes, until the mushrooms are tender and golden brown.
