4 boneless, skinless chicken breasts

2 cups fresh mushrooms, finely chopped (such as cremini or button)

1 small onion, finely diced

3 cloves garlic, minced

1 cup spinach, chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped for garnish (optional)

Prep the Chicken: Preheat your oven to 375°F (190°C). Carefully slice each chicken breast horizontally, creating a pocket without cutting all the way through. Season both sides with salt and pepper.

    Cook the Mushroom Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and chopped mushrooms, cooking until the mushrooms release their moisture and become golden, about 5-7 minutes.

      Add Spinach and Cheese: Stir in the chopped spinach and cook until wilted. Remove from heat and let the mixture cool slightly. Once cooled, mix in the cream cheese, mozzarella, Parmesan, thyme, oregano, and adjust seasoning with salt and pepper to taste.

        Stuff the Chicken: Spoon generous portions of the mushroom filling into the pocket of each chicken breast. Secure with toothpicks if necessary to hold the filling inside.

          Sear the Chicken: In the same skillet over medium-high heat, add a bit more olive oil if needed. Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.

            Bake: Transfer the seared chicken breasts to a baking dish, and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Allow the chicken to rest for 5 minutes before removing toothpicks. Slice the stuffed chicken breasts and serve garnished with freshly chopped parsley.
