Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Cheesecake Filling:

16 oz cream cheese, softened

1 cup powdered sugar

½ cup sour cream

1 cup heavy whipping cream

Zest of 2 lemons

½ cup fresh lemon juice (about 2-3 lemons)

1 tsp vanilla extract

Topping:

Fresh berries (such as raspberries or blueberries) for garnish

Extra lemon zest for garnish

Instructions
 

Make the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well-coated and the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Use the back of a measuring cup for even pressing. Chill in the refrigerator while preparing the filling.

        Prepare the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2-3 minutes).

            - Gradually add the powdered sugar, and mix until fully incorporated.

              - Add the sour cream, lemon zest, lemon juice, and vanilla extract to the cream cheese mixture. Mix until smooth and well blended.

                Whip the Cream:

                  - In a separate bowl, whip the heavy cream with an electric mixer until stiff peaks form (about 3-5 minutes).

                    - Gently fold the whipped cream into the lemon cheese mixture using a spatula. Be careful not to deflate the whipped cream.

                      Assemble the Cheesecake:

                        - Pour the cheesecake filling onto the chilled crust. Spread it evenly with a spatula.

                          - Smooth out the top and optionally, use the spatula to create a decorative swirl.

                            Chill:
