Zest of 2 lemons

1 cup granulated sugar

3 large eggs

1 ½ cups heavy cream

1 teaspoon vanilla extract

For the raspberry layer:

1 cup fresh raspberries (plus extra for garnish)

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

Prepare the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9x9-inch square baking dish to form an even layer. Place it in the refrigerator to set while you prepare the filling.

    Make the lemon filling: In a large mixing bowl, whisk together the lemon juice, lemon zest, sugar, and eggs until thoroughly combined. In a separate bowl, whip the heavy cream until soft peaks form. Carefully fold the whipped cream into the lemon mixture until it's well combined and smooth.
