Ingredients

1 ½ cups rolled oats

1 cup pitted dates, soaked in warm water for 10 minutes

½ cup unsweetened shredded coconut

½ cup almond butter (or any nut butter of choice)

1 cup ripe mango puree (about 1 large ripe mango)

1 tablespoon maple syrup or honey (optional, adjust based on sweetness of mango)

½ teaspoon vanilla extract

¼ teaspoon salt

¼ teaspoon turmeric (for color, optional)

Extra shredded coconut for topping

Instructions

Prepare the Base: In a food processor, combine the rolled oats, soaked dates (drained), shredded coconut, and almond butter. Blend until the mixture is well-combined and holds together when pressed. If the mixture is too dry, add a tablespoon of water at a time until desired consistency is reached.

Press the Mixture: Line an 8x8-inch (20x20 cm) square baking dish with parchment paper. Transfer the oat mixture into the dish and press it down firmly and evenly using the back of a spatula or your hands to create the base layer.

Make the Mango Layer: In a clean food processor, add the mango puree, maple syrup (if using), vanilla extract, salt, and turmeric (if using). Blend until smooth and creamy.

Layer It Up: Pour the mango mixture over the pressed oat base, smoothing it out with a spatula to cover the base evenly.

Chill and Set: Sprinkle extra shredded coconut on top of the mango layer for decoration. Place the baking dish in the refrigerator for at least 2-3 hours or until the bars are set.

Cut and Serve: Once set, remove the bars from the baking dish using the parchment paper for easy lifting. Cut into squares or bars of your preferred size. Store leftovers in an airtight container in the refrigerator.
