Ingredients

1 (20 oz) can of crushed pineapple, drained

1 (8 oz) package of cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 (8 oz) container of whipped topping (thawed)

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/2 cup shredded coconut (sweetened or unsweetened, based on preference)

Fresh pineapple chunks and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are fully coated. Press this mixture firmly into the bottom of a 9-inch square or round dish to form the crust. Place it in the refrigerator to set while you make the filling.

Make the Cream Cheese Mixture: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually mix in the powdered sugar and vanilla extract until well combined.

Fold in the Topping: Gently fold the thawed whipped topping into the cream cheese mixture using a spatula. Ensure there are no lumps and the mixture is light and fluffy.

Add Pineapple and Coconut: Carefully fold in the drained crushed pineapple and shredded coconut until evenly distributed throughout the cream cheese mixture.

Layer the Dessert: Remove the crust from the refrigerator. Pour the pineapple cream mixture over the graham cracker crust, spreading it evenly with a spatula.

Chill: Cover the dessert with plastic wrap or a lid and refrigerate it for at least 4 hours, or overnight for best results, to allow it to set firmly.

Serve: Once chilled, cut into squares or slices and serve cold. Garnish with fresh pineapple chunks and mint leaves if desired. Enjoy your refreshing and delightful no-bake dessert!
