Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 cup mini marshmallows

1 cup semi-sweet chocolate chips

½ cup heavy cream

½ teaspoon vanilla extract

Extra mini marshmallows for topping

Optional: Chocolate drizzle for garnish

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Form the cups: Press the graham cracker mixture evenly into the bottom and sides of a muffin tin or silicone cupcake molds, creating a crust for each cup. Make sure to pack it tightly. Place the tin in the refrigerator to chill for about 15-20 minutes.

Make the chocolate ganache: While the crust sets, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let it sit for about 5 minutes, then stir until the chocolate is completely melted and the mixture is smooth. Add the vanilla extract and mix until combined.

Assemble the cups: Take the chilled crusts from the refrigerator and fill each cup with the chocolate ganache, smoothing the tops as needed.

Add marshmallows: Sprinkle a layer of mini marshmallows on top of the chocolate ganache in each cup.

Toast the marshmallows: Using a kitchen torch, carefully toast the mini marshmallows on top until golden brown. Alternatively, place the cups under a broiler for 1-2 minutes (keep a close eye to prevent burning).

Chill again: Once toasted, place the s’mores cups back in the refrigerator for about 15-20 minutes to set.

Serve and enjoy: Remove the cups from the muffin tin or silicone molds, drizzle with melted chocolate if desired, and serve immediately.
