Ingredients

2 cups fresh or frozen blueberries

1 cup granulated sugar (divided)

2 cups heavy cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Instructions

Prepare the Blueberries: In a medium saucepan, combine the blueberries and 1/2 cup of the sugar. Cook over medium heat, stirring occasionally, until the blueberries have softened and released their juices (about 5-7 minutes). Use a potato masher or fork to lightly crush the blueberries. Remove from heat and let it cool.

Make the Ice Cream Base: In a large mixing bowl, whisk together the sweetened condensed milk, remaining 1/2 cup of sugar, vanilla extract, lemon juice, and a pinch of salt until fully combined.

Whip the Cream: In a separate bowl, use a hand mixer or a stand mixer to whip the heavy cream until stiff peaks form. This should take about 3-5 minutes.

Combine: Gently fold the whipped cream into the condensed milk mixture in three parts. Begin by adding a third of the whipped cream to lighten the mixture, then gently fold in the actual whipped cream until fully incorporated. Be careful not to deflate the whipped cream.

Add the Blueberry Mixture: Fold in the cooled blueberry mixture gently, leaving some swirls throughout for a marbled effect, but not fully mixing it in.

Freeze: Pour the mixture into a lightly greased or lined loaf pan. Smooth the top, cover it with plastic wrap, and freeze for at least 6 hours, or until firm.

Serve: Once frozen, remove the ice cream from the pan, scoop it into bowls or cones, and enjoy your delicious homemade blueberry ice cream!
