Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

2 cups rolled oats

1 ½ cups chocolate chips (semi-sweet or dark)

½ cup chopped nuts (optional, such as walnuts or pecans)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, making sure to fully incorporate each egg before adding the next. Stir in the vanilla extract.

Mix the Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, and salt until well combined.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Add Oats and Chocolate Chips: Fold in the rolled oats and chocolate chips (and nuts if using) with a spatula, ensuring an even distribution throughout the dough.

Spread in Pan: Pour the cookie batter into the prepared baking pan, spreading it evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out with a few moist crumbs.

Cool and Cut: Allow the bars to cool in the pan for about 10 minutes. Use the parchment paper (if lined) to lift them out onto a cutting board. Once fully cooled, cut into squares or rectangles.

Serve and Enjoy: Serve warm for gooey chocolate goodness or at room temperature. Store any leftovers in an airtight container for up to a week.
