One-Pan Lemon Garlic Chicken and Asparagus

4 boneless, skinless chicken breasts

1 lb fresh asparagus, trimmed

4 cloves garlic, minced

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Lemon wedges, for serving

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the marinade: In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and pepper. Mix well.

      Marinate the chicken: Place the chicken breasts in a large bowl or a zip-top bag and pour half of the marinade mixture over them. Massage the marinade into the chicken for even coating. Let it marinate for at least 15-30 minutes (or longer in the fridge for more flavor).

        Arrange in the pan: On a large baking sheet, arrange the marinated chicken breasts in a single layer. Spread the trimmed asparagus around the chicken.

          Coat the asparagus: Drizzle the remaining marinade over the asparagus, ensuring the spears are well-coated.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C) and the asparagus is tender.

              Broil for finish: For an added touch, switch the oven to broil for the last 2-3 minutes to give the chicken a golden finish. Keep an eye on it to prevent burning.

                Serve: Remove from the oven and let it rest for a few minutes. Serve hot with lemon wedges and garnish with fresh parsley if desired.
