1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

1 small butternut squash, peeled, seeded, and cubed (about 4 cups)

4 cups vegetable broth

1 can (14 oz) diced tomatoes with juices

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, adjust to taste)

1 package (9 oz) refrigerated cheese tortellini

2 cups fresh spinach

Salt and pepper, to taste

Grated Parmesan cheese for serving

Fresh basil for garnish (optional)

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the drippings.

    Cook the Aromatics: In the same pot, add the diced onion and cook for about 3-5 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Butternut Squash: Incorporate the cubed butternut squash into the pot. Stir it around to coat with the oil and drippings, cooking for about 5 minutes.

        Add Liquids and Seasonings: Pour in the vegetable broth and diced tomatoes with their juices. Add thyme, oregano, red pepper flakes (if using), and season with salt and pepper to taste.
